Happy Father’s Day to you all from Elizabeth at Drudge Family Maple Syrup! We are enjoying these sunny June days. Actually, we are very thankful for each sunny day we have in June, because in the month of June, the leaves on the Maple trees are gathering “sugar” from the sun, and sending it down to the roots. The roots store the sugar until the Spring, when the roots send the sugar up the tree to start the new leaves. We are able to collect some of that sugar when we tap the trees in March. So, if there are lots of sunny days in June, the sap will be sweeter next March. That is, the sugar content of sap will be higher. Some years it takes 40 litres of sap to make one litre of Maple Syrup. Some years if it is very cloudy in June, it might take 50 or 60 litres of sap next Spring to make one litre of Maple Syrup. The sunny days in June affect that ratio.

With the serious aspect of COVID surrounding our country, I hope you are all staying healthy. Life stays about the same, here on the farm, as we continue on with our regular farm work. The crops are growing nicely; corn, soybeans, wheat, canola and black beans are looking good.

On these hot days, if you want a cool treat, fill a glass with cold milk, then add 2 tablespoons of Drudge’s Maple Syrup, 2 teaspoons of instant coffee and 1/2 teaspoon of vanilla. Adjust the amounts to suit you. Enjoy!
