2019 season started a little later than the past few years. We began tapping in mid to late February, which is quite common, but the weather was too cold for the sap to begin running till early March. The first several weeks was rather slow, but the season was steady, and by the first week in April we had made over an average crop of Maple Syrup. The quality is very good this year. The sap was sweeter than some years. This is apparently due to a warm, sunny June last summer. This is when the trees are taking in sunshine and nutrients for the coming year.
